Il selenio è un oligoelemento essenziale che svolge un ruolo fondamentale per la salute umana. È necessario per il corretto funzionamento di vari enzimi e proteine nell’organismo e agisce anche come antiossidante, proteggendo le cellule dai danni causati dai radicali liberi. Sebbene la carenza di selenio sia rara nei Paesi sviluppati, dove le diete sono generalmente diversificate ed equilibrate, nei Paesi in via di sviluppo può rappresentare un problema significativo per la salute.L’assunzione inadeguata di selenio attraverso la dieta è la causa principale della carenza di selenio. Questa carenza può portare a diversi problemi di salute, tra cui l’indebolimento della funzione immunitaria, l’aumento del rischio di alcuni tipi di cancro, la riduzione delle funzioni cognitive e l’infertilità. Nei Paesi in via di sviluppo, dove la malnutrizione e l’accesso limitato a cibi nutrienti sono prevalenti, la carenza di selenio può essere più comune.
